Eating on a budget part 2! Seasoned chicken breast with roasted chicken gravy and steamed veggies

Are you hungry??? Do you want a healthier version of comfort food? Do you need a very easy recipe?

Well, I have an entire meal for you!

Seasoned chicken breast with roasted chicken gravy with a side of brown basmati rice and steamed veggies!!  OH MY GOODNESS!

It is very difficult to find sauces and creamy toppings that are not a gut buster.  Simply Organic is a wonderful brand that makes a variety of delicious sauces and mixes.  They are very low in calorie, only contain organic ingredients, are very healthy and do not contain MSG.  I purchase them from Sprouts so I know they are good for me!

Emerson (my fiancé) fell in love with this one.

I had a little help from these grocery finds.


1 1/3 c water (for the rice)

1 cup warm water (for the gravy mix)

1 tbsp of Parsley (fresh or dried)

Lawry’s Black Pepper Seasoned Salt

½ tsp Sea Salt

1 tbsp Canola Oil

2 tbsp EVOO (extra virgin olive oil)

2 pieces of Chicken Breast

1 cup Basmati Brown Rice

Yellow Squash


Green beans (fresh or frozen)

1 package of Simply Organic Roasted Chicken Gravy (only $1.49!)

Here we go!

Basmati Brown Rice

Pour the water, brown rice, parsley, salt and canola oil in a sauce pan.  Cover and bring to a boil for 15 minutes.  After 15 minutes, turn off the heat and allow the rice to simmer for 5 minutes.

Seasoned Chicken Breast

Heat a pan on medium with the EVOO.  Coat the chicken breast with the seasoned salt and parsley.  Cook the chicken for about 10 minutes on each side.  Make sure to cover the pan with a lid so the chicken stays nice and juicy.

Roasted Chicken Gravy

All you need to do is follow the package directions!  This is super easy gravy.  All you have to add is water.  Can you believe that?!

Steamed Veggies

Well, this is just self-explanatory!  Steam your veggies in a steamer on the stove or in the microwave.  I chopped up half of a zucchini and half of a yellow squash.  Use any veggies you want!

Once everything is done, top it off with the roasted chicken gravy!  Delish!

I LOVE farmers markets!  We need more of them in Austin, Texas, especially during the week.  I randomly ran into a farmers market during a trip in California around Pacific Beach (PB).  I tried my first pluot (I KNOW!) and I ate the most delicious and juicy nectarines.

Check out the giant zucchini this lady grew in her garden! It’s HUGE!!

One of my favorite local vendors was Baba Foods.  They have a variety of blended hummus dips, pita chips and breads.  They are all available to sample at the booth.  I even went back for seconds to, you know, make sure all the samples were still good.  OMG, their dips are delicious!! A few can also be used as marinades and dressings.  They will also give you a bundle deal if you purchase 3 or more. So….. I bought three!!

All of the dips are natural, vegan and contain no additives or preservatives.

 You can order them online and even find some at your local Costco.  Enjoy them with some pita bread or tortilla chips. Yum!

Curry Lentil Soup

Curry Lentil Soup


I could not find a lentil soup recipe that did not seem bland.  So, as curious and determined as I am, I decided to just make my own and risk the only 1 pound bag of lentils I had.  I was either going to love it, hate it, and then throw it all away.  Well, it turned out AMAZING and extremely flavorful!! Thank goodness because I have tried some horrible lentil soup, which turned me away from ever trying or making it.



1 lb lentils (I used Trader Joe’s green lentils)

1 cup filtered water

5 cups low-sodium chicken broth (I used central market organics)

1 celery stalk (finely chopped)

1 carrot (finely chopped)

1 garlic clove (finely chopped)

¼ onion (finely chopped)

3 handfuls fresh spinach (not frozen)

1 tbsp extra virgin olive oil

5 bay leaves

½ tsp ground coriander

½ tbsp curry powder

¼ tsp turmeric

¼ parsley

¼ tsp dried rosemary

1/8 ground ginger

2 tsp tomato paste

¼ c tomato sauce

*1 tomato (finely chopped-optional)

Get started!!

Warm up a stockpot and add the olive oil on low-medium heat.  Stir in the celery, carrot, garlic and onion. Sauté for about 8 minutes or until the onion lightly browns.  Pour in the broth and water and raise heat to medium.  Stir in the rest of the ingredients, cover and let boil for 35-40 minutes.  Stir occasionally so you don’t have blobs of tomato paste.  Turn off the heat and let the soup simmer for 10 minutes until the lentils are nice and soft.

I personally do not like the texture of tomatoes so I left it out.  It is a great addition for flavor if you are a fan of the red goodness.

Turkey Patties with Avocado and Sweet Potato Fries for Two! Yum!

**Preheat oven to 450 degrees for the fries.**

  • 2 organic turkey burger patties (I use Applegate Organics)
  • 1 tbsp parsley (freshly chopped or dry)
  • dash of sea salt
  • dash of black pepper
  • 1 tsp brown sugar
  • 2 tbsp Worcestershire sauce
  • 2 slices of cheese (Use any kind you want. I used muenster cheese.)
  • 1 avocado
  • 1-2 cups sweet potato fries (I use Alexia, all natural sweet potato fries with sea salt.)

This is a simple meal that only takes 20-30 minutes to prepare and cook.  I love the Applegate products!  They are the only brand I have seen (so far) that not only tastes good but does not contain any antibiotics, nitrates or gluten and are casein free.  The turkeys are also humanely raised and not treated poorly by those folks you see in the documentary Food Inc.  Each patty contains 17g of protein, zero sugars, zero carbohydrates and are low in sodium.  You can also marinate them with anything I want!

First, marinate the turkey patties with 1 tbsp Worcestershire sauce on each patty and on both sides.  Sprinkle a dash of sea salt, black pepper, brown sugar and parsley on both sides of each patty.  I like to lightly press down on the patty so the each ingredient can stick.

2013-07-17 21.42.08Parsley is one of the most nutritious garnishes that can be found at any grocery store.  It is an excellent source of vitamins K, C, and A and has zero calories.

Place a non-stick skillet on medium heat (my stove top dials have number so I chose 5), spray with cooking spray and then place your patties on the skillet with a spatula.  I tried placing the patties with my hand and they completely fell apart! Cook the patties for 6-8 minutes on each side.

Once you get the patties going, start on the sweet potato fries.  I usually make sweet potato fries from scratch but Alexia is a good brand that is quick and does not require peeling.  Fresh sweet potatoes also take longer to bake.  You can find them at most grocery stores.  Costco has a gigantic bag that can save you $$$$!  I tend to start the fries before cooing anything else so they come out nice and crispy.  Cover a baking sheet with parchment paper and place the fries on top.  Spread the fries around so they do not stick to each other.  Spray the fries with cooking spray.  This will help the parsley and sea salt stick.  Sprinkle the fries with parsley.  I added sea salt because I like it a little more salty.  Bake at 450 degrees for 20 minutes.

Once your patties are done, top them with any cheese of your liking and some fresh sliced avocado.  I added a side of organic baby carrots and a bowl of sliced cucumbers with lemon and a sprinkle of sea salt. YUM! 🙂

Woka Woka!

The Wok!

I love my first and only Wok!

2013-07-17 12.06.40Thanks to an awesome Christmas gift card, I was able to purchase my very (surprisingly) affordable wok at Sur la table.  The brand is Joyce Chen and it was $24.95.

This baby heats up so quickly and I can add anything to it!  It is very easy to clean and has a hook so I can hang it on my rolling kitchen cart.  Like any non-stick pan, make sure to use wooden utensils or else you will scratch your beautiful wok.

I still cannot master the wok toss but someday I will!!
