Pre-heat oven at 450 degrees
What you need:
•small sweet potatoes
**Cayenne Pepper (optional)
Peel as many sweet potatoes as you want. I peeled 5 very small ones. My sweet potatoes came from a local grocery store. The small size makes it easier to cut. I had to go all Jackie Chan on the bigger sweet potatoes because they were so thick and hard! I am SO glad I found a bag of small sweet potatoes.
Slice the potatoes. The thicket the slices are, the longer it takes to bake all the way through. Place your fries on a cookie sheet covered with parchment paper. Spray the fries with cooking spray then season with sea salt and parsley. For those who like a bit of a kick, add a sprinkle of cayenne pepper! Yum!
Bake at 450 degrees for 20 minutes or until they are as crispy as you want. Just don’t burn the fries! Eat them plain or with your favorite dipping sauce. Enjoy!
